Makes: 24 bites
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon grated ginger root
1 teaspoon grated orange zest
1/4 teaspoon ground coriander
1/4 teaspoon curry powder
1 teaspoon minced garlic
2 large boneless skinless chicken breasts
12 slices bacon, sliced in half crosswise
1. Preheat oven to 400 degrees F.
2. Place soy sauce, sugar, ginger, orange zest, coriander, curry, and garlic into a large resealable plastic bag. Seal and shake to combine, then add chicken. Seal bag again, turn to coat, and refrigerate for 30 minutes.
3. Drain chicken from marinade and cut into 24 bite-sized pieces. Wrap one piece of chicken in each half-strip of bacon, pinning shut with toothpicks.
4. Place on baking sheet and bake for 20 to 25 minutes, until bacon is crisp and chicken is no longer pink inside.
